Produced with milk collected in May, June and July when greenery and flowers are abundant in the high altitude plateaus of Kars, this special cheese stands out with its full-fat, sourdough-leavened and firm consistency.
15–16 liters of milk are used for every 1 kg of kashar; this shows that even half a kilo requires an intensive milk labor.
It is cut into slices from large wheels (12–12.5 kg) and shipped in 500 gr vacuum packaging.
Unlike market-type kashars, it is not soft; It has a hard, aromatic and long-lasting structure.
