The freshest milk obtained from animals grazing freely in nature in May, June and July forms the basis of production. For this reason, gruyere is made only with milk from the villages closest to the dairy farms.
The processing time is as critical as the quality of the milk; That's why it does not tolerate mistakes and fraud.
